Stevia leaf is well known as natural sweetener with 300 sweeter times than sugar.
Some previous studies showed that stevioside and rebaudioside A are glycoside
contained in stevia leaf give the sweet taste. Stevioside can be harvested by solidliquid
extraction. In this study, extraction process of stevia leaf was done in 1 Liter
batch extractor by varying solvent and temperature. Three solvent (water, ethanol,
methanol) and three temperature (45 °C, 50°C,55°C) variations were investigated.
The results showed ethanol produce extract with the highest yield. Rising
temperature would increase the yield and ash content of extract. Extraction with
water produce the extract with the highest stevioside content because water has
highest polarity of ethanol and methanol. |
